Red Curry Mashed Potatoes

Warm things up on a cool evening by adding a little spice to your mashed potatoes.

Preparation Time:   10 minutes
Cooking Time:   20 minutes
Yield:   6   1/2 cup servings
Ingredients
2 pounds potatoes
3 tablespoons olive oil
1 1/4 cups coconut milk
2-5 cloves roasted garlic
1 1/2 teaspoons unrefined sea salt
1 teaspoon fresh ground black or green peppercorns
1/2 - 1 1/2 teaspoons red curry paste
